Chef Keith Squires has “discovered” Wales and a healthier eating lifestyle.
Matching mind and body is important to the Kent-born chef and author who arrived in Bangor University to study forestry and fell in love with Wales upon entering Nant Ffrancon Valley.
He said, “At that time I also started Dru yoga classes and they just happened to be based in the same area. Now I appreciated the open spaces in a different way by practicing yoga outside.
“The mountains provided an inspiring backdrop and chance to reconnect with nature. Later I ended up being in charge of the ayurvedic food at the Dru centre. Ever since then I see the Nant Ffrancon Valley nearly every day but it still holds the same enchantment.”
He is now resident chef at the Dru centre and has launched Cooking With Love, his hardback glossy colour book, explaining more about Ayurvedic principles of wellbeing.
